The basic preparation for a traditional Norwegian fishcake (also suitable for fish-balls and fish-paté) is perfectly fresh minced fish, fiskematt, beaten with roughly half is own volume of full-fat cream (fresh or soured) with a scraping of nutmeg. Norwegians like to keep things simple.
