Spongecake, as above, is the the basis for lamingtons (always plural), dainty fist-sized fancies covered in chocolate and dusted with coconut - call them fairy-cakes at your peril – named for (or possibly were invented by) Charles Lamington, Governor of Queensland during Queen Victoria’s Diamond Jubilee. Much like chocolate brownies in the US (original name, Little Indians), lamingtons are a regular feature of Australia’s charity circuit.
