Just in case of anatomical confusion, the three cephalopods of value to the cook - squid, cuttlefish, octopus - can easily be told apart on the fishmonger's slab. Squid has a long cone-shaped cap supported by a clear plastic 'bone'; cuttlefish caps are roundish and the supporting ‘bone’ is white, oval and chalky; octopus, on the other hand, has a hood rather than a cap and eight legs (the other two have an extra two tentacles) are attached to the body rather than dangling from the cap.
