Delicious! Of course reminds me so much of my Tuscan/Etruscan neighbors although we were far from the sea and its riches. But so much is similar. And so very much has changed in the years since we had these life-changing experiences, no?

Indeed so, Nancy. But there’s still an appreciation of life and food and the capacity for enjoyment. My sister-in-law lives part of the year in Llanes (Cantabria) - she organises the UK side of the pilgrimage to Santiago, and sometimes does the walk herself. Spain remains so resolutely regional that I have to find out what’s likely to be on the table when I visit her for myself - different horses for courses. There’s a flatbread made with maize-meal - polenta - that usual in the mountains that I’ve never seen elsewhere.
